Abstract
This study examined the current status of operation and satisfaction for the foodservice at daycare centers in Chungbuk province. The survey was conducted from July 18, 2016 to August 6, 2016. The operation status, utilization status, and perception of the foodservice of daycare centers were analyzed. In addition this study investigated the levels of importance and performance for the foodservice quality attributes for all daycare centers and according to the region type. The overall satisfaction with the foodservice and the quality attributes that affect the degree of satisfaction was assessed. Regarding the general characteristics of the parents, 105 subjects (51.5%) lived in cities, and 99 subjects (48.5%) resided in counties. The ratio of females was higher, and 163 female subjects (79.9%) participated. With respect to the importance and performance of foodservice quality attributes, factor analysis of 37 attributes revealed four factors: food, service, sanitation, and facility. The score for overall satisfaction with the foodservice was 4.48 points out of 5 points. The degree of satisfaction with dietary education and eating habits was modest. There was a positive correlation between the overall satisfaction and satisfaction of foodservice quality attributes as a whole. Overall attributes, such as seasonal menu provision, management of proper handwashing, and sanitation of tableware, were found to have a significant effect.
